Ingredients:
- 250g paella rice
- 200g PROPERONI® Chorizo, sliced
- 200g king prawns, peeled and deveined
- 200g mussels, cleaned and debearded
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- A handful of frozen peas
- 1 teaspoon turmeric powder
- 750ml chicken or vegetable stock
- 1 lemon, cut into wedges
- Fresh parsley, chopped, for garnish
- Salt and pepper to taste
- Olive oil
Instructions:
1. Heat a tablespoon of olive oil in a large paella pan or frying pan over medium heat. Add the PROPERONI® Chorizo slices and cook until they release their oils and turn slightly crispy. Remove the chorizo from the pan and set aside.
2. In the same pan, add a little more olive oil if needed, then add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened, about 5 minutes.
3. Stir in the paella rice and turmeric powder, making sure the rice is well coated in the oil and spices.
4. Pour in the chicken or vegetable stock, season with salt and pepper to taste, and stir well to combine. Add the peas and bring the mixture to a simmer.
5. Arrange the king prawns and mussels on top of the rice mixture, placing them evenly around the pan.
6. Cover the pan with a lid or aluminum foil and simmer gently for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid. Avoid stirring the rice once the seafood is added to prevent it from becoming mushy.
7.Once the rice is cooked and the seafood is pink and cooked through, remove the lid. Sprinkle the cooked PROPERONI® Chorizo over the paella.
8. Garnish with chopped fresh parsley and serve hot with lemon wedges.
