We've teamed up with Pizza Guru Dough and Behold and the pepper royalty PEPPADEW to create a Pizza Sandwich to rival all others, try this one our in your pizza oven today....
For the Dough:
4 x 140g gram dough balls: Best flour to use in Typo 00 Flour, or a strong white bread flour. Flour: 333g Water: 217g (65% Hydration) Salt: 10g (3%) Fresh Yeast: 0.3g (or Instant dried yeast 0.12g) this is for 24 hours at a controlled room temp of 20 degrees C. Mix together ingredients until dough comes together and there are no dry bits. Cover and leave dough for 45 mins. Then, every 10 mins, give the dough a series of folds, or a little kneading, cover, let it rest for 10 mins, and then repeat 4 to 5 times until your dough is smooth and you can shape it into a nice smooth ball and then cover with an airtight lid and leave for 10-16 hours at room temperature. Eight hours before you want to make your sandwiches, divide and shape the dough into 4 x 140g dough balls, place in a covered dough tray for 8 hours, then they will be ready to use.
For the Pizza Sandwich:
Stoke your pizza oven up with wood or turn the gas up high until your oven stone reaches a temperature of 400-450C (Electric Ooni Volt oven 400C) - Take one 140g dough ball, place on a floured work surface and press out into a small circle with your fingers, gently work the dough until you have a 9-10 inch base. - Drizzle olive oil onto of this base, add some grated Grana Padano and then fold the dough over in half. - Slide the dough onto a pizza peel and launch into your Ooni pizza oven. - The hot pizza stone will cook your dough in around 60-90 seconds, so once you have launched your dough, watch it puff up (it looks like a big pair of lips - the best way to describe it!) - When your sandwich looks ready, remove from the oven and allow to cool for a few minutes, then carefully, pull apart the top and bottom of of the pizza dough and apply your toppings! - For this pizza sandwich I added: - Fresh Basil leaves - Half packet PROPERONI & 1 x Mozzarella ball, sliced and added to a roasting pan, placed in the pizza oven at full heat for 45-60secs until hot, sizzling and cheese has melted, then remove from oven and pour this delicious mixture into your sandwich! - Next, in a cast iron griddle pan that has been preheated in your pizza oven until blisteringly hot, add a big handful of Peppadew Peppers, return to the oven on full flame and wait for them to sizzle and char (about 30-40seconds) remove from oven, allow to cool a little, then add these to your sandwich. - Next, grab a ball of burrata and tear off a few pieces and add on top of your PEPPADEW peppers! - Sprinkle with crushed pistachio nuts - Drizzle with delicious Hot Honey, whatever brand you prefer. - Add a small sprinkle of sea salt - Devour and enjoy!
