PROPERONI®  Pepperoni Crumble Carbonara

Shopping List: 

PROPERONI® Pepperoni Crumble (hero ingredient), Spaghetti or rigatoni (pasta aisle), 6 free range eggs (use the yolks) (dairy), Pecorino or Parmesan pre-grated fine (dairy/deli), Fresh parsley small pack (fresh herbs), Black pepper (storecupboard).

Recipe: 

1. Cook pasta in well-salted boiling water until al dente. Save a mug of pasta water before draining. 

2. Mix egg yolks, grated pecorino and plenty of black pepper into a thick paste. Loosen with a splash of pasta water. 

3. Take pasta off the heat. Toss with the egg mixture, adding pasta water a little at a time until silky and creamy. 

4. Plate up, then top with a big handful of PROPERONI® crumble,  the smoky heat is the whole point of this dish. 

5. Finish with extra pecorino, cracked pepper and fresh parsley. Eat immediately.
